First, Peel and chop the garlic, ginger, and onions.we will make a garlic, ginger, ad onion paste.Blend the ingredients until you get a smooth paste.

Put the potatoes, cabbage, carrots, and bell peppers in a pressure cooker. Add 1/2 cup of water and a little salt. Cook for 2 whistles, then turn off the heat and set it aside.

Heat butter and oil in a large pan over medium heat. Add cumin seeds and let them splutter.Add half onions and sauté until they turn translucent.

Add ginger-garlic paste and cook for a minute until the raw smell disappears.Add turmeric powder, red chili powder, coriander powder, and salt. Mix everything thoroughly.

Add tomatoes, green peas and cook until they become soft and the oil starts to separate from the mixture.

Mash the vegetables with a masher to your desired consistency.

Add the mashed vegetables to the masala and mix well. If the mashed vegetables are too thick, add a little water to adjust the consistency. The bhaji should be a thick, well-mixed gravy.

Add pav bhaji masala and mix well.

Adjust salt and spices if needed.Garnish with chopped coriander leaves.

Preparing the Pav:
Heat a griddle or tawa over medium heat. Add 1/2 teaspoon oil in tawa.and toast the buns on the griddle until they are golden brown and crispy.
Serve
Serve the hot bhaji in a bowl, garnished with coriander leaves and accompanied by the toasted pav buns.
