In my effort to create a healthier version of pasta, I recently experimented with multigrain flour and spinach puree.The process involved several steps, but the outcome was both delicious and nutritious. Here's a detailed account of how I made it and how my family responded to this culinary adventure.

๐Ÿซ• 1 teaspoon salt (divided)
๐Ÿซ• 1/2 teaspoon ajwain (carom seeds)
๐Ÿซ• Water, as needed
๐Ÿซ•2 tablespoons oil (divided)
๐Ÿซ•1 teaspoon cumin seeds
๐Ÿซ•3-4 garlic cloves, finely chopped ๐Ÿซ•1 large onion, finely chopped
๐Ÿซ• 3 large tomatoes, finely chopped
๐Ÿซ• 1/2 cup tomato sauce
๐Ÿซ•Fresh basil leaves,
๐Ÿซ•1/2 teaspoon black pepper powder
๐Ÿซ• pasta seasoning
๐Ÿซ• carrot, capsicum, cabbage chopped

โ˜€ In a large bowl, mix the multigrain flour, spinach puree, 1/2 teaspoon salt, and ajwain. Add water gradually and knead the mixture into a smooth dough.
โ˜€ Cover the dough and let it rest for at least 20 minutes.

โ˜€ Heat 1 tablespoon of oil in a pan and add cumin seeds. Once the cumin seeds crackle, add the finely chopped garlic and sautรฉ until golden brown. Add the chopped onions ,green chilli and sautรฉ until they turn translucent.

โ˜€Add the chopped cabbage, carrot, capsicum and tomatoes and cook until they become soft and mushy.

โ˜€Roll out the rested dough into thin rotis (flatbreads) and cut them into thin strips.

โ˜€In a large pot, bring water to a boil, add 1/2 teaspoon salt and a little oil.Add the pasta strips to the boiling water and cook until they are done. Drain the pasta and set it aside.
