I hope you are happy and healthy. Today i will share a recipe of mutton biryani. Today is my daughter's birthday, and our plan was to celebrate at a restaurant. However, her friends were coming over, and they wanted to eat mutton biryani. So, I quickly started preparing mutton biryani. Here, I'm sharing the recipe with you.

๐ŸŒธOnions: 4 large (sliced)
๐ŸŒธ Whole Garam Masala for akhni: 1 tablespoon (bay leaves, cinnamon sticks, black peppercorns, cardamom)
๐ŸŒธSalt: to taste
๐ŸŒธWater: 1 glass
๐ŸŒธOil: 6 tablespoons
๐ŸŒธ Green chilies: 4 (chopped)
๐ŸŒธCoriander powder: 2 tablespoons
๐ŸŒธYogurt: 1 cup
๐ŸŒธ Black pepper: 1 teaspoon
๐ŸŒธBay leaf: 1
๐ŸŒธCinnamon stick: 1
๐ŸŒธ Small cardamom: 3-4
๐ŸŒธYellow chili powder: 1 teaspoon
๐ŸŒธ Garam masala: 1 teaspoon
๐ŸŒธorange food color: a pinch (optional)

First, wash the rice thoroughly and soak it for 1 hour.

Then, grind the biryani spices.

๐ŸŒฟ First, weโ€™ll prepare the mutton. Place the mutton in a pressure cooker with garlic paste, ginger paste, one sliced onion, whole garam masala, salt, and one glass of water. Cook until you hear 4 whistles, then set aside.

๐ŸŒฟ In a large pot, heat 6 tablespoons of oil. Add the remaining sliced onions and fry until they turn golden brown. Remove a small portion of the fried onions for garnishing later.

๐ŸŒฟ Add black pepper, bay leaf, cinnamon stick, and small cardamoms to the pot. Then add garlic paste, chopped green chilies, and coriander powder. Cook this mixture until itโ€™s well-fried.

๐ŸŒฟ Add yogurt to the fried spices and mix well. Let it cook for a few minutes.

๐ŸŒฟ Add the remaining water from the cooked mutton and additional water as needed, so thereโ€™s enough to cook the rice. Bring this to a boil.

๐˜พ๐™ค๐™ค๐™ ๐™ž๐™ฃ๐™œ ๐™ฉ๐™๐™š ๐™๐™ž๐™˜๐™š:
๐ŸŒฟAdd the soaked rice to the boiling water mixture. Stir gently.

๐ŸŒฟ Add the cooked mutton pieces and mix carefully.

๐ŸŒฟCook on high heat until most of the water is absorbed.

๐ŸŒฟ Once the water is almost gone, reduce the heat to low. Add garam masala and yellow chili powder.

๐ŸŒฟ Garnish with the fried onions and a pinch of food color if desired.

๐ŸŒฟ Cover the pot tightly and let it simmer on low heat for 15 minutes.

Your hot and delicious mutton biryani is now ready to be served! My daughterโ€™s friends thoroughly enjoyed this biryani and had a great time eating it along with cake.
