Potato and Spinach Curry with Sesame Garnish

I hope you are happy and healthy. Today, I will share a recipe of delicious potato and spinach curry with special twist. 𝙄𝙣𝙜𝙧𝙚𝙙𝙞𝙚𝙣𝙩𝙨:

🍃 4 large potatoes, cut into big pieces
🍃 2 cups spinach leaves
🍃4 cloves garlic
🍃1/2 inch piece of ginger
🍃 1 small onion
🍃2 green chilies
🍃2 tablespoons oil
🍃1 teaspoon cumin seeds
🍃 1 tablespoon white sesame seeds
🍃 Salt to taste
🍃 Water as needed


𝙎𝙩𝙚𝙥 𝙗𝙮 𝙎𝙩𝙚𝙥 𝙈𝙚𝙩𝙝𝙤𝙙

𝙋𝙧𝙚𝙥𝙖𝙧𝙖𝙩𝙞𝙤𝙣𝙨:
🍃 Cut the potatoes into large pieces and set them aside.

🍃Blanch the spinach leaves by boiling them briefly in water, then quickly transferring them to an ice bath. Drain the spinach and puree it in a blender until smooth.

𝙎𝙥𝙞𝙘𝙚𝙨 𝙋𝙖𝙨𝙩𝙚:
🍃 Make a paste using garlic, ginger, tomatoes, onion, and green chilies.

𝘾𝙤𝙤𝙠𝙞𝙣𝙜:
🍃 Heat oil in a pan and add cumin seeds, allowing them to crackle.
🍃 Add the potato pieces and fry them on high heat until they start to turn golden brown.

🍃Stir in the prepared garlic, ginger, onion, and green chili ,tomato, and red chilli powder, turmeric powder and coriander powder.

Saute the mixture, stirring frequently, until the raw smell disappears.

🍃 Pour in the spinach puree and mix well with the potatoes and spices. Continue to cook, stirring occasionally, until the potatoes are cooked through and the spinach has fully blended with the spices.


🍃 Add a little water if necessary to adjust the consistency. Cover and let the curry simmer on low heat for 2-3 minutes. 🍃Sprinkle white sesame seeds over the curry just before serving.
