Veggies Khichdi: A Nutritious Rice and Lentil Porridge

I hope you are happy and healthy. Today, I will share a recipe of delicious and healthy khichadi. Khichadi, the classic comfort food of India, offers a perfect blend of rice, lentils, and vegetables, making it a nutritious and fulfilling meal. This versatile dish can be customized with various vegetables based on what’s available, and it’s easy to prepare. In this recipe, we will guide you through making a delightful Veggies Khichadi, highlighting some key steps to enhance its flavor and texture.

Ingredients
🍄1cup small-grain rice (not basmati)
🍄 1/2 cup split yellow moong dal (lentils)
🍄 1 medium-sized onion, finely chopped
🍄1 medium-sized tomato, finely chopped
🍄1 cup mixed vegetables (carrots, capsicum, potatoes, raw mango), chopped
🍄 1 teaspoon cumin seeds
🍄 A few curry leaves
🍄 2 green chilies, slit
🍄 2 tablespoons oil
🍄Salt to taste
🍄Fresh coriander leaves for garnish
🍄 4-5 cups water


𝙎𝙩𝙚𝙥 𝙗𝙮 𝙎𝙩𝙚𝙥 𝙈𝙚𝙩𝙝𝙤𝙙:
𝙋𝙧𝙚𝙥𝙖𝙧𝙖𝙩𝙞𝙤𝙣
🌺Rinse the rice and moong dal separately under running water until the water runs clear. Soak them together in water for about 15-20 minutes. Drain and set aside.

𝘾𝙤𝙤𝙠𝙞𝙣𝙜 𝙩𝙝𝙚 𝙆𝙝𝙞𝙘𝙝𝙖𝙙𝙞:
🌺 Heat oil in a pressure cooker over medium heat. Add the chopped onions and sauté until they turn golden brown. Remove a small portion of the sautéed onions and set aside for garnish

🌺 In the same cooker, add cumin seeds and curry leaves. Let them splutter.

🌺Add chopped carrots, tomatoes, capsicum, green chilies, raw.mango and potatoes. Saute the vegetables for a few minutes. (You can also add fresh beans if available. I didn't add beans.because I didn't have French beans available at the moment ) and cook for another minute until the raw smell disappears.

🌺 Add the drained rice and moong dal to the cooker. Saute for 1-2 minutes to enhance the aroma.

🌺 Pour in 5 cups of water (or 4 cups if you prefer a less liquid consistency).and add salt. And stir to combine all ingredients evenly.

𝙋𝙧𝙚𝙨𝙨𝙪𝙧𝙚 𝘾𝙤𝙤𝙠𝙞𝙣𝙜
🌺Close the lid of the pressure cooker and cook on medium-high heat for 1-2 whistles.
🌺 Once the pressure releases naturally, open the lid and give the khichadi a gentle stir.

𝙎𝙚𝙧𝙫𝙞𝙣𝙜:
🌺 Garnish with the reserved sauteed onions and freshly chopped coriander leaves. Serve hot with a side of pickle or mint chatni.
