Growing Indoors

Stuff like basil, cilantro, parsley is worth growing indoors. Cilantro and parsley will bloom out in the summer and become unusable (coriander, though!). So you can extend that indoors. Basil does weaken significantly after blooming but keeping it indoors will help prevent that. Basil is also pretty good as a houseplant.

Mint, sage, thyme, chives, oregano, tarragon, rosemary (may get burned if there is a cold shock), lavender are great for outdoor containers. Just winterize the containers (preferebly use a cover or insulation of some sort). Idk what zone you're in but if you let me know that would be great.

Generally, in containers, you want to grow things one zone lower than your actual zone.

Some species are more hardy than others. There are several ones that should definitely not be hardy enough (i.e. L. multifida) that do great as houseplants.
And if you do grow some of these herbs indoors be careful of pests. Many of these herbs have very thin cuticles, which makes them very susceptible to pests such as thrips and spider mites.

Oh, and. All will want well-draining soil. Moisture shouldn't be much of a concern as long as your soil is well-draining (I've grown rosemary in pure clay, also...)

Any purchased gardening mix is very likely to not have enough drainage. Definitely supplement with sand,vermiculite,perlite, etc...
If you make your own mix with strictly peat moss and perlite, note that it will lack nutrients.

Pairing the plants isn't a big of a problem, it's more of just what looks nice to you (i.e. Sage pairs nice with the glaucous look of chives). Although, do keep in mind that many are perrenials terracore and will grow much larger, and that some are woody shrubs while others are herbacious (i.e. Lavender will not be divible as it grows -- only prunable, whereas Thyme can be divided when it becomes too large).
